WHEN THE OCEAN INSPIRES CHANGE:
TWO VISIONARIES UNITED BY THEIR COMMITMENT TO THE SEA

Ángel León, the three-Michelin-starred chef renowned worldwide for his commitment to ocean conservation and stewardship through the research of new marine ingredients, has brought his most personal project, Aponiente, to life and we wanted to be part of it. He fell in love with an abandoned tidal mill and salt marshes in the natural surroundings of the Bay of Cádiz and set out to revive the area, transforming it into a natural park where his passion for the sea and gastronomy come together.

The project has helped restore more than 70 hectares of salt marshes and tidal flats, promoting biodiversity, regenerating habitats, and creating new economic opportunities in a region with deep historical ties to the sea.

Ecoalf has designed the new staff uniforms for the restaurant, transforming recycled and low-impact materials into a genuine commitment to protecting the ocean and the planet. The Aponiente designed by Ecoalf collection features garments made from recycled and low-impact materials, including T-shirts crafted from 100% recycled cotton, which save more than 80% of the water compared with a conventional cotton T-shirt. A conventional cotton T-shirt requires approximately 2,700 litres of water to produce enough drinking water for one person for almost three years. Aponiente designed by Ecoalf saves more than 65,000 litres of water and prevents more than 800 kg of CO₂ emissions.

THE WORK OVERALLS, A KEY PIECE IN THE COLLECTION, ARE MADE USING COFFEE GROUNDS, GIVING A SECOND LIFE TO A MATERIAL THAT WOULD OTHERWISE HAVE NO FURTHER USE ONCE THE COFFEE HAS BEEN CONSUMED.
